Velvety tomato puree
Mutti® Puree (Passata) is sun-ripened 100% Italian tomatoes transformed into a sweet velvety puree with just a touch of Mediterranean sea salt. After eliminating the skin and seeds, the tomatoes are pureed to achieve a smooth, luxurious texture while maintaining their bright red color and naturally sweet flavor. Fantastic in marinara sauce, tomato soup, or even a Bloody Mary.
How is it made?
The tomatoes are crushed and heated to over 90°C. Each tomato's juice is separated from the peel, seeds, and cellulose by centrifugal force.
Concentrating the refined tomatoes is done by vacuum evaporation in stainless steel containers. Maintaining a temperature of 65°C helps to preserve the taste characteristics of the product before moving to the pasteurization stage.
The tomato puree is ready to be packed after it is heated to about 92°C to ensure microbiological stability. The bottles are filled while the puree is still hot. Then they can retreat for a few seconds before they are finally cooled with water.

Cooperation with WWF Italy
Mutti has worked closely with the WWF in Italy to help farmers find sustainable ways to reduce their water consumption and CO2 emissions. The Italian WWF not only set goals, but it also allowed farmers to analyze and review data to identify what they can do. For example, the organization recommended the use of special sensors that recognize the moisture content of the soil and provide useful information to support efficient water use.
Mutti invested in technology, education, and technical support for farmers and agricultural organizations. Even after our five-year project came to an end, we are still as committed as ever to minimizing our environmental impact and improving every step of our production.

How to use
Passata is perhaps the easiest way to cook with Mutti products, as it only requires heating or can be eaten cold. It is ideally suited to short cooking times and gives great flavor for pasta sauces, eggs, and white meat. Tomato puree withstands heat well, so it's perfect for a red sauce, pasta sauces and on bread.
